At this point in the summer, I’ve spent a lot of time with the bean plants. Because of how quickly they grow, beans must be harvested 2-3 times a week and each harvest takes about an hour. Even though the harvesting process gets old pretty fast, I’m still completely infatuated with one of the bean varieties that I’ve now been growing for the past two years. Blue Coco beans are a French heirloom that originated in the 18th Century. I love them not only for their brilliant purple color, but also because they start producing early and continue producing steady, heavy harvests all the way through the summer in a way that no other bean I have ever grown has even come close to.
